Salmon is one of the best fish to cook. It’s healthy and packed with nutrition and great taste. It is very versatile, you can season it with a wide variety of flavours.

Baking the fish in foil is the best way to cook fish in my opinion. After 20 minutes, you’ll have a wonderfully tender salmon that easily flakes with a fork, seasoned with a honey glaze with just a hint of ginger and garlic in it, we loved it! Plus all you have to do to clean up is throw the tin foil in the bin. No baked on sauce.

Ingredients:

  • 2 Salmon Steaks, skin and bones removed
  • salt and freshly ground pepper, to taste
  • 3 cloves garlic, minced
  • 2 cm cube of fresh ginger, grated
  • 3 tbsp honey
  • 1 tbsp toasted sesame oil
  • 2 tbsp soy sauce
  • 2 tbsp rice wine vinegar
  • 2 spring onions, thinly sliced
  • 1 teaspoon sesame seeds

How To:

  1. In a small saucepan, combine all liquid ingredients, add grated ginger and pressed garlic. Stir, bring to a boil on medium-high heat and allow to simmer until the glaze is reduced and thickened, about 10-15 minutes.
  2. Preheat oven to 190°C. Line a baking tray with tin foil.
  3. Place salmon onto the prepared baking sheet and season with salt and pepper.
  4. Fold up the sides of the foil so the glaze wont spill. Spoon the glaze over the salmon and sprinkle the spring onion and sesame seeds over the top. Fold the sides of the foil over the salmon, covering completely and sealing the packet closed.
  5. Place into oven and bake until cooked through, about 10-15 minutes. Open the packet for the last 2-3 minutes, or until caramelised and slightly charred.
  6. Serve hot with rice and vegetables.
